When I was growing up in Puerto Rico, I didn’t have the opportunity to know much about Mexican foods. I knew about the richness of its culture and had visited Mexico City, San Miguel de Allende and Guadalajara, and had enjoyed many of their wonderful dishes in those trips, but it wasn’t until I moved to California, that I really learned and was exposed to Mexican dishes and recipes more often. The Mexican friends that “adopted” my husband and I that first year we got married, would make home-made tortillas, delicious enchiladas, pozole from scratch and out of this world huevos rancheros, among others.
Last week, I had the opportunity to chat and cook with Mexican recipe developer, food photography stylist and book author Ericka Sanchez. Born in Mexico and raised in Texas, young Ericka was 10 when she came to the United States not knowing a world of English. An example that we can learn a language at any age. Today, she lives in the Los Angeles area, is an award winning food blogger, and is well known for her platform, Nibbles and Feasts, a site she created in 2010 out of her love and passion for the cuisines she had experienced in her travels and with her mom and grandmother.

Ericka is the author of two cooking books, Aguas Frescas & Paletas, which includes recipes for Mexican beverages, and frozen treats and the upcoming Buen Provecho, filled with recipes that offer traditional Mexican flavors for breakfast, lunch, dinner, appetizers, holidays and deserts.
